yeast added wort in large vessel (often tens of thousands of litres) called washback. washbacks commonly made of oregon pine or stainless steel. yeast feeds on sugars, , by-product, produces both carbon dioxide , alcohol. process called fermentation , can take 3 days complete. when complete, liquid has alcohol content of 5 7% volume, , known wash. until point process has been quite similar production of beer.
